No Bake Cookies

Love cookies but don't like or don't have the time to slave over a hot oven? I have a sweet answer for you NO-BAKE COOKIES!!!
These cookies are perfect for the moments when you are desperately craving something sweet and CHOCOLATY. These cookies are really as easy as they sound, and a great recipe to make and /or share with family, friends and kids.

2 cups sugar
1 cup margarine or butter
½ cup milk
4 tablespoons cocoa
1 teaspoon vanilla extract
3 cups quick oats
3/4 cup chocolate chips
In Large saucepan combine sugar, margarine, milk and cocoa
Bring the first four ingredients to a boil over medium heat, stirring frequently.
Continue boiling for 3 minutes.
Remove from heat and add vanilla, oatmeal, and chocolate chips, and stir until combined.
Drop onto wax paper and cool. ( this can be messy)
Let stand until firm and remove from wax paper

*Make sure you store in a tightly covered container
*If using old fashioned oats, cool mixture in saucepan 5 minutes.

Holiday Windows 2011!!

One of my favorite parts about living so close to NYC is getting to see all of the gorgeous window displays when it is holiday season. I love walking throughout the city with hot chocolate and looking at them all. This year a lot of stores went above and beyond to create some incredible displays. Check out some of my favorite photos below!!
